All the mellow floral flavor of ripe pears is captured in this elegant sorbet. I was served the sorbet as an intermezzo course at a fancy dinner years ago. I think it is much better for dessert. Grappa, a clear or golden spirit distilled from grapes, adds pizzazz, as does sprinkling a little more over the sorbet before serving.

SERVES: 8

INGREDIENTS:

  • 1 lemon
  • 1 cup sugar
  • 1½ cups water
  • 6 large ripe pears, peeled, halved lengthwise, and cored
  • 2 tablespoons grappa

 

INSTRUCTIONS:

  1. Zest the lemon and squeeze its juice into a small bowl.
  2. In a large saucepan, combine sugar, water, and the lemon zest strip. Bring to a simmer over medium heat, stirring until the sugar is dissolved.
  3. Add the peeled, halved, and cored pears to the saucepan. Cover and cook over medium heat for about 15 minutes, or until the pears are tender when pierced with a knife.
  4. Remove the pears from the cooking syrup using a slotted spoon and discard the lemon zest.
  5. Transfer the cooked pears to a blender or food processor and puree until smooth.
  6. Add the lemon juice and syrup from the cooking process to taste, and continue processing until smooth.
  7. Add the grappa to the pear mixture and process again.
  8. Pour the mixture into a bowl, cover, and refrigerate until chilled for several hours or overnight.
  9. Freeze the mixture in an ice cream maker following the manufacturer’s instructions.
  10. Pack the sorbet into a container, cover, and freeze until firm for about 2 hours or up to 3 days.
  11. Allow the sorbet to sit at room temperature for 10 to 15 minutes before serving.
