INGREDIENTS:
- 1 lemon
- 1 cup sugar
- 1½ cups water
- 6 large ripe pears, peeled, halved lengthwise, and cored
- 2 tablespoons grappa
INSTRUCTIONS:

- Add the peeled, halved, and cored pears to the saucepan. Cover and cook over medium heat for about 15 minutes, or until the pears are tender when pierced with a knife.
- Remove the pears from the cooking syrup using a slotted spoon and discard the lemon zest.
- Transfer the cooked pears to a blender or food processor and puree until smooth.
- Add the lemon juice and syrup from the cooking process to taste, and continue processing until smooth.
- Add the grappa to the pear mixture and process again.
- Pour the mixture into a bowl, cover, and refrigerate until chilled for several hours or overnight.
- Freeze the mixture in an ice cream maker following the manufacturer’s instructions.
- Pack the sorbet into a container, cover, and freeze until firm for about 2 hours or up to 3 days.
