COOK TIME: 8 minutes
YIELD: 6 wraps
INGREDIENTS:
- 1 batch Steamed Seitan or 1 (14-oz [396-g]) bag store-bought vegan “chicken” strips (gluten-free and/or soy-free if needed)
- 1 tbsp (15 ml) canola oil
- 1 batch Peanut Vinaigrette, divided (gluten-free and/or soy-free if needed)
- 1 cup (110 g) shredded carrot
- 2 cups (94 g) shredded iceberg lettuce
- ½ cup (28 g) vegan fried wonton strips or vegan chow mein noodles (crunchy variety) (gluten-free and/or soy-free if needed)
- 6 medium-sized vegan flour tortillas (gluten-free if needed)
INSTRUCTIONS:
- Cut the seitan into strips that are ½ inch (1.3 cm) thick and 1 to 2 inches (2.5 to 5 cm) long.
- In a large skillet, heat the oil over medium heat. Stir in the seitan strips and cook, stirring often, for 4 to 6 minutes, or until crispy.
- Lower the heat to medium-low. Reserving ¼ cup (60 ml) of Peanut Vinaigrette, add the remaining vinaigrette to the seitan and cook, stirring often, for 1 to 2 minutes. Remove from the heat.
- For each wrap, place an equal amount of peanut seitan, carrot, lettuce, and wonton strips down the center of the tortilla.
- Drizzle your desired amount of the reserved Peanut Vinaigrette on top.
- Fold in the sides and secure with a toothpick.
- Serve immediately.
