  • 2 tablespoons (28 ml) olive oil
  • 1 cup (160 g) diced onion
  • 1 bay leaf
  • 1 teaspoon celery seed
  • 1 cup (225 g) green split peas
  • ¼ cup (50 g) pearl barley
  • ½ cup (101 g) lima beans
  • 10 cups (2.4 L) water
  • ¼ teaspoon pepper
  • ½ teaspoon basil
  • ½ teaspoon thyme
  • ½ teaspoon caraway seed
  • ¼ cup (28 g) grated carrot
  • ½ cup (50 g) diced celery
  • ½ cup (30 g) fresh parsley
  • 1 large potato, diced

 

PREPARATION:

  1. Heat olive oil in a skillet over medium-high heat. Sauté the diced onion, bay leaf, and celery seed until the onion becomes translucent.
  2. Transfer the sautéed mixture to a slow cooker. Add the green split peas, pearl barley, lima beans, water, pepper, basil, thyme, caraway seed, grated carrot, diced celery, fresh parsley, and diced potato. Stir well to combine.
  3. Cover the slow cooker and cook on low heat for about 4 to 6 hours.
  4. Before serving, remove the bay leaf.
