INGREDIENTS

  • 2 tomatoes (jitomates)
  • 1/2 an onion (cebolla)

INSTRUCTIONS

  1. To prepare the tomatoes, start by blanching them. Boil a pot of water and make a small “X” mark at the bottom of each tomato. Carefully place them in the boiling water for about 30 seconds to 1 minute or until you see the skin starting to peel away.
  2. Remove the tomatoes from the boiling water and immediately transfer them to a bowl of ice water. This process, known as blanching, helps loosen the tomato skins, making them easy to peel.
  3. Once the tomatoes are cool, peel off the skins, and cut them in half. Use a spoon to scoop out the seeds, leaving behind the fleshy part of the tomatoes. Discard the skins and seeds.
  4. Dice the peeled and deseeded tomatoes into small pieces.
  5. Finely chop the half onion and the clove of garlic.
  6. Depending on your heat preference, finely chop the desired amount of chile serrano. Start with 1 tsp for a mild salsa and increase to 4 chiles for a very hot version.
  7. Combine all the diced and chopped ingredients in a bowl.
  8. Season the mixture with salt and pepper to taste.
  9. Allow the salsa Mexicana to sit for at least one hour before serving. This resting period allows the flavors to meld together and develop a harmonious taste.
