INGREDIENTS

  • 2 large egg yolks
  • 2 tablespoons unsalted butter
  • A pinch of salt

 

For the Pastry:

  • 1 sheet of puff pastry (store-bought or homemade)
  • 1 egg (for egg wash)
  • Powdered sugar (for dusting, optional)

 

INSTRUCTIONS

  1. Prepare the Orange Filling:
    • In a saucepan, combine the fresh orange juice, orange zest, granulated sugar, cornstarch, and a pinch of salt.
    • Cook the mixture over medium heat, stirring constantly, until it thickens and comes to a boil. This should take about 5-7 minutes.
    • Remove the saucepan from heat.
    • In a separate bowl, lightly beat the egg yolks. Gradually whisk in a small amount of the hot orange mixture to temper the yolks, then pour the egg yolk mixture back into the saucepan, whisking constantly.
    • Return the saucepan to low heat and continue to cook and stir for another 2-3 minutes, or until the filling thickens further.
    • Remove the orange filling from heat and stir in the unsalted butter until it’s fully melted and incorporated.
  2. Prepare the Pastry:
    • Preheat your oven to the temperature indicated on the puff pastry package or to 375°F (190°C) if using homemade pastry.
    • Roll out the puff pastry sheet on a lightly floured surface to create a rectangle.
    • Cut the pastry into smaller squares or rectangles, depending on your preference for the size of the puffs.
  3. Assemble the Orange Puffs:
    • Place a small spoonful of the orange filling in the center of each pastry square.
    • Fold the pastry over the filling to create triangles or rectangles, depending on the shape you’ve chosen.
    • Use a fork to seal the edges of each puff.
  4. Bake the Orange Puffs:
    • Place the assembled puffs on a baking sheet lined with parchment paper.
    • In a small bowl, beat the egg to create an egg wash. Brush the tops of the puffs with the egg wash.
    • Bake in the preheated oven for about 15-20 minutes, or until the puffs are puffed up and golden brown.
  5. Serve:
    • Remove the orange puffs from the oven and let them cool slightly.
    • Optionally, dust the puffs with powdered sugar before serving.
