No meatballs with Hassel back potatoes

This recipe brings together the delightful flavors of Asian Spiced Burgers transformed into savory meatballs, served with a rich tomato sauce. Accompanied by perfectly crispy potatoes, this meal offers a harmonious blend of textures and tastes. It’s a simple yet satisfying dish that can be prepared quickly in the air fryer.

INGREDIENTS:

  • One box Asian Spiced Burgers, thawed and rubbed
  • One onion, finely chopped
  • Three sprigs of fresh rosemary, stalks cut and finely chopped
  • Two teaspoons of Dijon mustard
  • One to two teaspoons of dried oregano
  • Two green chilies, finely chopped
  • Two tablespoons of chickpea flour (or all-purpose meal)
  • Two to three tablespoons of water
  • One can of tinned sliced tomatoes or your choice of pasta sauce
  • Half a cup of tomato sauce

INSTRUCTIONS:

PREPARE THE MEATBALL MIX:

  1. In a bowl, combine the grated Asian Spiced Burgers with finely chopped onions, rosemary, Dijon mustard, dried oregano, finely chopped green chilies, chickpea flour (or all-purpose flour), and water. Mix everything thoroughly to create a batter that can be rolled into balls.

SHAPE THE MEATBALLS:

  1. Use your hands to shape the batter into small meatballs. Place them on a plate and set them aside in the fridge for 5 minutes to firm up.

COOK THE MEATBALLS IN THE AIR FRYER:

  1. Preheat the air fryer to 200°C (390°F).
  2. Place the meatballs in the air fryer basket, ensuring they are evenly spaced.
  3. Cook the meatballs at 200°C for 8 minutes or until they are nicely browned and cooked through.

PREPARE THE SAUCE:

  1. Transfer the cooked meatballs to a small ovenproof plate.
  2. Pour the tinned tomatoes (or pasta sauce) and tomato sauce over the meatballs.
  3. Place the plate in the Air fryer basket. Alternatively, create a foil “dish” and place the meatballs and tinned tomatoes in it.

HEAT THE MEATBALLS AND SAUCE:

  1. Slide the plate (or foil dish) into the air fryer.
  2. Set the temperature to 170°C (340°F) and the timer for 5 minutes to warm everything through.

PREPARE THE POTATOES:

  1. While the meatballs are cooking, prepare the potatoes. If the potatoes are large, slice them in half.
  2. Cut slits about 0.5-1 cm apart and 1 cm from the base into the potatoes.

COOK THE POTATOES IN THE AIR FRYER:

  1. Gently brush the potatoes with olive oil (optional).
  2. Cook the potatoes at 200°C (390°F) in the air fryer for 15 minutes.

BRUSH WITH OIL AND SEASON:

  1. Open the air fryer and brush the potatoes with oil again if necessary.
  2. Sprinkle the potatoes with herbs and salt.
  3. Continue to cook for another 15 minutes or until the potatoes are cooked through and crispy on the outside.

SERVE THE MEAL:

  1. Plate the crispy potatoes alongside the meatballs and sauce.
  2. Garnish the dish with fresh rosemary and serve with a side of green salad.

TIPS:

  • When shaping the meatballs, wet your hands slightly to prevent the mixture from sticking to your hands.
  • Feel free to adjust the level of spiciness by adding more or fewer green chilies, depending on your preference.
  • If you don’t have an air fryer, you can also bake the meatballs and potatoes in a conventional oven. Just adjust the cooking times and temperatures accordingly.
  • Customize the potato seasoning by adding your favorite herbs and spices for a personalized touch.
  • Serve this hearty meal with a side of fresh green salad to balance out the flavors and add some freshness to your plate.
