  • 250g Butternut Snap or Marie biscuits

  • 1/3 cup icing sugar, plus extra for dusting
  • ½ tsp vanilla extract
  • 250g blueberries
  • Finely shredded orange zest and honey, to serve

 

INSTRUCTIONS:

  1. To create the biscuit base, process the chosen biscuits in a food processor until finely chopped. Add melted butter and process until the mixture is well combined.
  2. Evenly press the biscuit mixture into the base of a 22cm wide x 2.5cm deep loose-base fluted tart pan. Refrigerate the base for at least 3 hours (or longer, if possible) to set.
  3. For the filling, combine the fresh ricotta, icing sugar, and vanilla in a medium bowl. Using electric hand beaters, blend the mixture until it becomes smooth. Cover and chill the mixture until you’re ready to serve.
  4. Just before serving, fill the tart case with the ricotta mixture, creating an even layer. Scatter the blueberries over the filling.
  5. Dust the tart with icing sugar, then sprinkle finely shredded orange zest over the blueberries. Drizzle a touch of honey over the tart for an extra layer of sweetness and visual appeal.
