SERVES 4

INGREDIENTS:

  • 1 baguette or crusty country bread
  • 4 teaspoons Aioli or mayonnaise mixed with chopped garlic
  • 8 ounces white mushrooms, plus 1/2 pound mixed specialty mushrooms (oyster, shiitake, enoki, or portobello – optional)
  • 2 tablespoons olive oil (or butter for a non-vegan option)
  • 1 teaspoon mixed dried herbs (thyme, oregano, rosemary, basil)
  • Juice of 1/2 lemon
  • Kosher salt and freshly ground black pepper
  • Fresh chopped parsley or chives (optional)

INSTRUCTIONS:

  1. Prepare the Bread: Begin by heating a stovetop grill or preheating your oven to 400°F. Slice the baguette or crusty country bread into 8 oblong slices, each about 1 inch thick. Spread Aioli or the mixture of mayonnaise and chopped garlic onto both sides of each slice. Grill or bake the bread slices until they bear dark brown grill marks on both sides. Once done, transfer them to a serving plate.
  2. Prepare the Mushrooms: Cut the mushrooms into large, uneven chunks and slices, mixing all the varieties together. Warm a large, heavy skillet over high heat. Add the mushrooms to the dry pan all at once, then add the olive oil or butter. Sprinkle the mixed dried herbs on top of the mushrooms. Allow the mushrooms to cook without stirring for the first 4–5 minutes, enabling them to develop a rich brown crust. After 5 minutes, stir to mix in the herbs and continue cooking until most of the accumulating liquid has evaporated. Season the mushrooms generously with lemon juice, kosher salt, and freshly ground black pepper.
  3. Assemble the Bruschetta: Spoon the beautifully cooked mushroom mixture onto the grilled bread slices, ensuring that each slice receives a generous portion of this flavorful topping. For an optional touch of freshness and color, garnish with freshly chopped parsley or chives.
