SERVES 4 TO 6
INGREDIENTS:
- 3 tablespoons unsalted butter or extra-virgin olive oil
- 1 onion, chopped fine
- 1 teaspoon sugar
- Salt and pepper, to taste
- 4 garlic cloves, minced
- ½ teaspoon hot paprika (or substitute with regular paprika and a pinch of cayenne)
- ¼ teaspoon saffron threads, crumbled
- ¼ teaspoon ground ginger
- ¼ teaspoon ground cumin
- 2 (15-ounce) cans chickpeas, rinsed
- 1 pound red potatoes, unpeeled and cut into ½-inch pieces
- 1 (14.5-ounce) can diced tomatoes
- 1 zucchini, cut into ½-inch pieces
- 3½ cups vegetable broth
- ¼ cup minced fresh parsley and/or mint
- Lemon wedges for serving
INSTRUCTIONS:
- Melt the butter in a Dutch oven over medium-high heat. Add the chopped onion, sugar, and ½ teaspoon of salt. Cook until the onion is softened, approximately 5 minutes.
- Stir in the minced garlic, paprika, saffron, ginger, and cumin. Cook until fragrant, which takes about 30 seconds. The beautiful aroma will start filling your kitchen at this point.
- Add the rinsed chickpeas, potatoes, diced tomatoes, zucchini, and vegetable broth to the pot. Stir all the ingredients together.
- Simmer the soup, stirring occasionally, until the potatoes are tender, which usually takes around 20 to 30 minutes.
- To achieve a thicker consistency, use a wooden spoon to mash some of the potatoes against the side of the pot.
- Remove the pot from heat, and stir in the minced fresh parsley and/or mint. Season the soup with salt and pepper to taste.
- Serve the Moroccan-Style Chickpea Soup hot, accompanied by lemon wedges for squeezing over the soup, enhancing the flavors and adding a zesty twist.
TIPS:
- Spice Up Your Spices: For an extra kick, you can adjust the spice levels to your preference. Increase the hot paprika or add a pinch of cayenne if you like your soup with a bit more heat.
- Sauteing Onions: Sautéing the onions with a touch of sugar not only speeds up their cooking but also enhances their natural sweetness, making the soup more flavorful.
- Saffron Infusion: The crumbled saffron threads add a distinct aroma and a rich golden color to the soup. Don’t skip this ingredient, as it plays a crucial role in creating the authentic Moroccan taste.
- Mashing the Potatoes: To achieve a rich and velvety consistency, mash some of the cooked potatoes against the side of the pot. This step helps thicken the soup and gives it a delightful texture.
- Garnish with Fresh Herbs: The minced fresh parsley and/or mint provide a burst of freshness and complement the spiciness of the soup. Sprinkle them over the soup just before serving to enhance its overall appeal.
