  • 1/2 cup raisins or dried cranberries
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract

 

INSTRUCTIONS

1. Preheat your oven:

  • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease each muffin cup.

2. Make the Muffin Batter:

  • In a large mixing bowl, whisk together the flour, granulated sugar, baking soda, ground cinnamon, ground ginger, and salt.
  • Add the grated carrots, grated apple, crushed pineapple, shredded coconut, chopped nuts (if using), and raisins or dried cranberries to the dry ingredients. Stir until well combined.

3. Prepare the Wet Ingredients:

  • In a separate bowl, whisk together the eggs, vegetable oil, and vanilla extract until well combined.

4. Combine Wet and Dry Ingredients:

  • Pour the wet ingredient mixture into the bowl with the dry ingredients and fold everything together until just combined. Be careful not to overmix; a few lumps are okay.

5. Fill the Muffin Cups:

  • Spoon the muffin batter into each muffin cup, filling them about 2/3 full.
