  • 1 cup strong brewed coffee, cooled to room temperature
  • 1 cup unsalted butter, softened
  • 4 cups confectioners’ sugar (powdered sugar)
  • 1/2 cup unsweetened cocoa powder
  • 2 teaspoons instant coffee granules or instant espresso powder
  • 3 tablespoons heavy cream or milk
  • 1 teaspoon pure vanilla extract

 

INSTRUCTIONS

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Combine Dry Ingredients: In a large mixing bowl, whisk together the flour, cocoa powder, granulated sugar, baking powder, baking soda, and salt.
  3. Mix Wet Ingredients: In a separate bowl, beat the eggs, buttermilk, vegetable oil, and vanilla extract until well combined.
  4. Combine Wet and Dry Ingredients: Gradually add the wet ingredients to the dry ingredients, mixing until the batter is smooth.
  5. Add Coffee: Stir in the brewed coffee until the batter is well combined. The batter will be thin, but that’s okay.
  6. Bake: Pour the batter evenly into the prepared cake pans. Bake for approximately 30-35 minutes or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
  7. Dissolve Coffee: In a small bowl, dissolve the instant coffee granules or instant espresso powder in the heavy cream or milk. Allow it to cool.
  8. Beat Butter: In a mixing bowl, beat the softened butter until creamy and smooth.
  9. Add Cocoa and Sugar: Gradually add the cocoa powder and confectioners’ sugar, beating until well combined.
