For the Pie Crust:

  • All-Purpose Flour – 2 1/2 cups
  • Unsalted Butter – 1 cup (2 sticks), cold and cubed
  • Salt – 1/2 teaspoon
  • Ice Water – 6-8 tablespoons

 

For Dusting:

  • Powdered Sugar – For dusting (optional)

 

INSTRUCTIONS

Preparing the Mincemeat Filling:

  1. In a large mixing bowl, combine the mixed dried fruits, chopped apple, brown sugar, grated suet (or vegetarian suet), candied peel, chopped almonds (if using), lemon zest, orange zest, ground cinnamon, ground nutmeg, and ground allspice.
  2. Stir the mixture until all the ingredients are evenly combined.
  3. Add the brandy or rum to the mixture, and stir well to distribute the liquid evenly. You can adjust the amount of alcohol to suit your preference for flavor.
  4. Cover the bowl with plastic wrap and let the mincemeat mixture sit at room temperature for at least 1-2 hours, or even overnight, to allow the flavors to meld together.

 

Preparing the Pie Crust:

  1. In a large mixing bowl, combine the all-purpose flour and salt.
  2. Add the cold, cubed unsalted butter to the flour mixture.
  3. Use a pastry cutter or your fingertips to work the butter into the flour until the mixture resembles coarse crumbs.
  4. Gradually add ice water, one tablespoon at a time, and mix with a fork until the dough just comes together. Be careful not to overwork the dough.

Assembling and Baking the Mince Pies:

  2. On a floured surface, roll out one of the chilled dough disks to about 1/8-inch thickness.
  3. Using a round pastry cutter, cut out circles large enough to fit your pie tin or muffin tin.
  4. Gently press the pastry circles into the tin, making sure they line the bottom and sides.
  5. Fill each pastry-lined tin with the prepared mincemeat filling. Be generous but avoid overfilling.
  6. Roll out the second dough disk and cut out circles for the pie tops or lattice designs.
  7. If using a full pie top, make small slits in the center to allow steam to escape.
  8. Place the pie tops or lattice designs on top of the filled mincemeat.
  9. If desired, brush the tops with a little milk or beaten egg for a golden finish.

 

Baking:

  1. Place the filled and topped pie tins in the preheated oven and bake for approximately 20-25 minutes, or until the pastry is golden brown.
