  • The cooked beans (about 4 cups with broth)

Prepare the Beans:

  1. Begin by bringing the washed pinto beans to a boil in a 2 1/2-quart pot. Add the roughly chopped white onion, 1 tablespoon of oil, salt, and 5 cups of water to the pot. This combination of ingredients forms the foundation of your flavorful bean broth.
  2. Reduce the flame and allow the beans to simmer for approximately 2 1/2 to 3 hours. Your goal is to achieve beans that are very tender. Be sure to skim the surface occasionally and add water as needed to maintain a brothy consistency.

 

Fry the Beans:

  1. In a 10″ skillet (preferably iron), cook the chopped white onion in 6 tablespoons of olive oil until it becomes translucent. This aromatic base sets the stage for the rich flavors that will develop.
  2. Now, it’s time to add the cooked beans along with their broth. Add the beans gradually, 1 cup at a time, while mashing them with a wooden spoon over high heat. This step is key to achieving the creamy and well-incorporated texture of refried beans.
  3. Continuously mash and stir the beans as they cook. Over time, you’ll notice the beans drying out and sizzling around the edges. This is a good sign! They should begin to detach from the surface of the pan. To ensure that they loosen completely, gently rock the pan back and forth.
  4. Once the beans are dry and have a slight crispiness around the edges, it’s time to turn them out onto a warm serving platter. This can be done omelet-style, ensuring that the beans are evenly spread out.
