INSTRUCTIONS:

  1. Prepare the Beets: In a small saucepan, boil the beets with red wine vinegar and enough water to cover them. Cook until the beets are tender, approximately 30 minutes. Once cooked, chill the beets, then peel and cut them into 1/4-inch slices.
  2. Make the Dressing: In a bowl, combine the rice wine vinegar, extra-virgin olive oil, dried oregano leaves, dried basil leaves, freshly chopped parsley, finely chopped shallots, salt, and pepper. Mix well to create the dressing.
  3. Marinate the Beets: Add the beet slices to the dressing, ensuring they are well coated. Allow the beets to marinate for 10–15 minutes to absorb the flavors.
  4. Prepare the Salad Bed: Lay out the romaine lettuce leaves on six plates, trimming the stem end to fit inside the rim.
  5. Assemble the Salad: Arrange the marinated beet slices on top of the romaine lettuce leaves in an overlapping pattern.
  6. Drizzle with Remaining Marinade: Drizzle the remaining dressing over the beets, evenly distributing the flavors.
