FOR CONTEMPORARY SMOKED FOOD & GRILLED DISHES

Magic Mushroom Powder is a versatile and flavorful seasoning blend that adds depth and complexity to a wide range of dishes. The name may evoke a whimsical image, but this spice mix is rooted in the combination of dried porcini mushrooms, dried thyme, and sel gris or other coarse salts. The earthy and umami-rich essence of the porcini mushrooms pairs perfectly with the aromatic notes of thyme and the mineral-rich taste of sel gris.

The powder is incredibly easy to make by grinding together the dried porcini and thyme until they form a coarse dust. Mixing in the sel gris or alternative coarse salt completes the blend. The resulting seasoning offers a unique and enticing flavor profile that enhances meats like beef and bison, bringing out their natural richness and savoriness.

Using Magic Mushroom Powder is a delightful way to elevate your culinary creations. Generously sprinkle it onto beef or bison steaks and massage it into the meat for the best flavor infusion. Allowing the seasoned meat to rest before cooking allows the flavors to meld beautifully. Additionally, this seasoning mix can be stored for an extended period, making it a convenient and readily available addition to your spice collection.

Whether you’re grilling, roasting, or pan-searing your meats, Magic Mushroom Powder will undoubtedly work its magic to enhance the taste and make your dishes truly memorable. So, explore the world of umami and culinary enchantment with this delightful seasoning blend!

MAKES: ABOUT ¾ CUP

INGREDIENTS:

  • 2 ounces dried porcini or other dried mushrooms
  • 2 teaspoons dried thyme
  • 2 tablespoons sel gris, kosher salt, or coarse sea salt

INSTRUCTIONS:

  1. GRIND together the dried porcini mushrooms and dried thyme in a blender or spice grinder until you achieve a coarse dust-like texture. Once ground, mix in the sel gris, kosher salt, or coarse sea salt.
  2. SPRINKLE the rub generously on the beef and then massage it into the meat thoroughly. Allow the seasoned beef to rest for at least 45 minutes at room temperature. For even more flavor infusion, you can wrap or cover the beef in the refrigerator and let it marinate for several hours before cooking.
  3. STORE any remaining rub in a covered container in a cool, dark pantry for up to 3 months, ensuring you have a flavorful blend on hand whenever you’re ready to grill or cook beef or bison steaks.

VARIATIONS:

  • Spicy Magic Mushroom Powder: Add some heat to the mix by including a pinch of cayenne pepper or crushed red pepper flakes. This will give your seasoning blend a spicy kick, perfect for those who love a little heat with their umami flavors.
  • Citrus Infused Magic Mushroom Powder: Incorporate dried citrus zest into the mix, such as lemon, lime, or orange zest. The citrus notes will add brightness and a refreshing twist to the earthy mushroom and thyme flavors.
  • Herbaceous Magic Mushroom Powder: Experiment with different dried herbs like rosemary, sage, or marjoram, in addition to the thyme. The combination of various herbs will elevate the aromatic aspect of the seasoning blend.
  • Smoky Magic Mushroom Powder: For a smoky touch, add a dash of smoked paprika or chipotle powder. The smokiness will complement the earthy mushroom taste and provide a hint of barbecue-like flavor.
  • Asian-inspired Magic Mushroom Powder: Introduce Asian flavors by including a small amount of dried ground ginger, garlic powder, and a pinch of Chinese five-spice powder. This variation will create a fusion of umami with the complexity of Asian cuisine.
  • Mediterranean Magic Mushroom Powder: Enhance the Mediterranean essence by adding dried oregano, basil, and a touch of sun-dried tomato powder. This variation will work particularly well with grilled vegetables and seafood.
  • Sweet and Savory Magic Mushroom Powder: For a unique contrast, blend in a little brown sugar or maple sugar. The sweetness will balance the savory flavors, creating a delightful combination.
