Macaroni croquettes are a delightful dish made by combining cooked macaroni with a creamy sauce, shaping it into croquettes, coating them in breadcrumbs, and frying them to a golden brown perfection. INGREDIENTS:

  • ½ cup of macaroni
  • 1 cup of hot milk
  • 1 tablespoon of butter
  • 2 tablespoons of flour
  • 2 egg yolks
  • 1 teaspoon of salt
  • 1 saltspoon of pepper
  • Bread crumbs (for coating)
  • Cooking oil or fat (for frying)
  • Tomato sauce (for serving)

INSTRUCTIONS:

  1. Boil the Macaroni:

    Fill a kettle with salted boiling water. Add ½ cup of macaroni to the boiling water. Let the macaroni boil briskly for half an hour.

  2. Drain and Cut Macaroni:

    Drain the cooked macaroni and cut it into small pieces.

  3. Prepare the Sauce:

    In a separate saucepan, make a sauce by combining 1 cup of hot milk, 1 tablespoon of butter, and 2 tablespoons of flour. Stir until the mixture thickens.

  4. Add Seasonings and Egg Yolks:

    Once the sauce has thickened, remove it from heat. Add the yolks of 2 eggs, 1 teaspoon of salt, and 1 saltspoon of pepper to the sauce. Mix well. Ensure that the sauce doesn’t cook after the eggs are added.

  5. Incorporate Macaroni:

    Stir the chopped macaroni into the sauce mixture. Allow the mixture to cool.

  6. Shape the Croquettes:

    When the macaroni mixture has cooled, form it into pyramid-shaped croquettes. You can use your hands to shape them.

  7. Coat with Egg and Crumbs:

    Roll each croquette in beaten egg, ensuring it’s evenly coated. Roll the coated croquettes in bread crumbs to create a crispy exterior.

  8. Fry Until Golden Brown:

    Heat cooking oil or fat in a frying pan over medium-high heat. Carefully place the coated croquettes into the hot oil. Fry the croquettes until they are golden brown on all sides. This should take approximately 3-4 minutes per side.

  9. Drain and Serve:

    Use a slotted spoon to remove the fried croquettes from the oil. Place them on a plate lined with paper towels to drain any excess oil.

  10. Serve with Tomato Sauce and Grated Cheese:

    Hominy croquettes can be served with a tomato sauce of your choice. Garnish the croquettes with a sprinkling of grated cheese before serving.
