PREPARATION TIME: 22 Minutes
INGREDIENTS:
- 1 cup Cashew Butter
- 2 Eggs
- Zest of 1 Lemon
- Juice of 1 Lemon
- 1/2 tsp. Vanilla Extract
- 6-10 drops Liquid Stevia (about 1/4 tsp. powdered stevia)
- 1/4 tsp. Baking Soda
INSTRUCTIONS:
- Preheat the oven to 350°.
- Wash the lemon and dry it thoroughly. Use a fine grater to zest the lemon rind into a large bowl. Be sure to get the entire colorful outer layer of the lemon. Then cut open the lemon and squeeze the juice into the bowl, being careful not to let any seeds in the bowl.
- Add the cashew butter, eggs, vanilla, baking soda, and stevia to the bowl and mix with a fork or spoon until all of the ingredients are fully blended.
- The consistency will be like a thick, viscous batter, which is a bit thicker than nut butter but a bit thinner than usual cookie dough. Take 12 small heaps of the batter and place them onto a cookie sheet, shaping them into cookie shapes.
- Bake at 350° for about 10-15 minutes. Let cool before serving.
BENEFITS:
- Gluten-Free and Grain-Free: These cookies are made without gluten-containing grains, such as wheat, making them suitable for individuals with gluten sensitivities or those following a gluten-free diet. They are also grain-free, as the main ingredient is cashew butter, which provides a creamy and nutty base.
- Healthy Fats from Cashew Butter: Cashew butter serves as the main ingredient in these cookies, providing a dose of healthy fats. Cashews are rich in monounsaturated fats, which are beneficial for heart health and help to support a healthy cholesterol profile.
- Protein from Cashew Butter and Eggs: Both cashew butter and eggs contribute to the protein content of these cookies. Protein is essential for muscle repair and growth, supports satiety, and helps regulate blood sugar levels. Including protein-rich ingredients in your cookies can make them more satisfying and provide longer-lasting energy.
- Refreshing Lemon Flavor: The zest and juice of fresh lemon add a bright and tangy flavor to these cookies. Lemons are rich in vitamin C, which supports immune function and acts as an antioxidant in the body. The refreshing citrus taste adds a delightful twist to the traditional cookie experience.
- Lower Sugar Option: These cookies are sweetened with liquid stevia or powdered stevia, which provides sweetness without adding extra calories or raising blood sugar levels. This makes them suitable for those watching their sugar intake or following a low-carb or keto lifestyle.
- Easy to Make and Customize: With only a handful of ingredients and simple instructions, these cookies are easy to whip up whenever a craving strikes. The recipe is also versatile, allowing for customization by adding extras like chopped nuts, dark chocolate chips, or coconut flakes.
