INGREDIENTS:
- 3 strips Prosciutto
- 1 cup butternut squash, cubed
- 1/4 cup sour cream
- 3 Tbsp thinly sliced fresh chives
- 6 lettuce leaves
- Kosher salt and freshly ground black pepper
INSTRUCTIONS:
- In a frying pan, cook the Prosciutto for about 3 minutes. Add the cubed butternut squash and season with salt and pepper to taste. Cook, stirring, for 6-8 minutes. Add the sliced chives and adjust the seasoning with salt and pepper. Let the mixture cool for several minutes.
- Chop the cooked Prosciutto and combine it with the cooled butternut squash, sour cream, and chopped chives in a mixing bowl. Mix well to incorporate all the ingredients.
- Place the lettuce leaves on a large platter. Spoon a dollop of the Prosciutto-sour cream-butternut squash mixture onto each lettuce leaf. Sprinkle with additional chopped chives. Serve immediately.
