This rub brightens any steak, but we particularly like it sprinkled on the Tuscan T-bone or porterhouse steak called bistecca alla fiorentina, a hearty charred steak topped with olive oil, lemon juice, and arugula.

MAKES: ABOUT ½ CUP
INGREDIENTS:
- 1 large shallot, minced
- 2 tablespoons fresh lemon zest (from 2 large lemons)
- ⅓ cup kosher salt or coarse sea salt
INSTRUCTIONS:
- Dry the Shallot and Lemon Zest:
- On a hot summer day with low humidity, set the minced shallot and lemon zest on a plate and leave it in the sun for about an hour.
- If insects are an issue, lightly cover the plate with cheesecloth.
- Alternatively, spread the minced shallot and lemon zest on a small piece of heavy-duty foil and place it in a preheated 200°F (93°C) oven or on a low grill for about 30 minutes until dried.
- Combine the Ingredients:
- In a small jar or another covered container, combine the dried shallot and lemon zest with the kosher salt or coarse sea salt.
- Close the container tightly and let it sit for at least a day to allow the flavors to meld together.
- Use the Sun-Dried Shallot and Lemon Salt:
- Sprinkle the sun-dried shallot and lemon salt heavily on the beef or other meats.
- Massage the seasoning into the meat to ensure even distribution.
- Allow the seasoned meat to rest for at least 45 minutes at room temperature before cooking.
- You can store any leftover sun-dried shallot and lemon salt in a cool, dry place for up to a few weeks.
