PREP TIME: 20 minutes

COOK TIME: 1 hour

SERVES: 4

INGREDIENTS:

  • 600g Sweet Potato, peeled, chopped
  • ¼ cup (60g) light sour cream
  • 3 teaspoons wholegrain mustard
  • 3/4 cup sourdough breadcrumbs
  • 1/3 cup (40g) grated parmesan
  • 1 tablespoon chopped parsley
  • 1 teaspoon finely grated lemon rind
  • 3 teaspoons olive oil
  • 4 x 120g barramundi fillets, skin off
  • 250g steamed broccoli florets, to serve

INSTRUCTIONS:

  1. Preheat Oven: Preheat the oven to 200°C/180°C fan-forced.
  2. Prepare Sweet Potato Mash: Boil, steam, or microwave the sweet potato until tender. Mash it with light sour cream and wholegrain mustard. Season the mixture to taste with salt and pepper.
  3. Prepare Breadcrumb Mixture: In a bowl, combine sourdough breadcrumbs, grated parmesan, chopped parsley, finely grated lemon rind, and olive oil. Mix the ingredients well to create a flavorful and textured crust.
  4. Coat Barramundi Fillets: Place the barramundi fillets on a baking paper-lined tray. Coat each fillet generously with the breadcrumb mixture, pressing it onto the surface to adhere.
  5. Bake Barramundi: Bake the coated barramundi fillets in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork.
  6. Serve: Plate the baked barramundi fillets alongside the creamy sweet potato mash. Add steamed broccoli florets to the plate for a nutritious side. Garnish with additional chopped parsley and a squeeze of lemon juice if desired.

TIPS:

  • Sweet Potato Prep: Ensure the sweet potato is peeled and chopped into uniform pieces for even cooking. Steaming, boiling, or microwaving the sweet potato until tender ensures a smooth and creamy mash.
  • Creamy Mash: Mixing light sour cream and wholegrain mustard with the sweet potato adds a tangy depth to the mash. Season the mixture to taste to balance flavors.
  • Flavorful Crust: The breadcrumb mixture adds a delightful crunch to the barramundi fillets. Ensure even coating by pressing the mixture onto the fillets.
  • Baking Barramundi: Preheating the oven to the specified temperature guarantees proper cooking. The barramundi fillets should be cooked until they easily flake with a fork.
  • Serving Presentation: Pair the Mustard Crusted Barramundi with the creamy sweet potato mash and steamed broccoli florets for a visually appealing and nutritionally balanced plate.
  • Garnish: Garnish with additional chopped parsley and a squeeze of lemon juice before serving for an extra burst of freshness.
