  • 8 ounces (225 g) fat-free sour cream
  • 2 tablespoons (16 g) flour

 

PREPARATION:

  1. Cut the lean lamb into 1-inch (2.5 cm) cubes.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Brown the lamb cubes in the skillet until they develop a rich, golden color.
  4. Transfer the browned lamb to a slow cooker.
  5. In the same skillet, add the onion wedges and minced garlic. Sauté until the onion is tender but not browned.
  6. Stir in the low-sodium cream of mushroom soup, water, and thyme, making sure to scrape off any browned bits from the bottom of the skillet.
  7. Pour the mixture over the lamb in the slow cooker.
  8. Cover the slow cooker and cook on low for 8 to 10 hours to allow the flavors to meld together.
  9. After the slow cooking process, turn the cooker to high heat.
  10. In a separate bowl, thoroughly blend the fat-free sour cream and flour.
