Roasted Tomatoes:

  • 2 medium Tomatoes, cut into 1/4″ slices
  • 1/4 cup Olive Oil
  • Salt & Pepper, to taste

Tart Base:

  • 1/2 cup Almond Flour
  • 1 tbsp. Psyllium Husk
  • 2 tbsp. Coconut Flour
  • 5 tbsp. Cold Butter, cubed
  • 1/4 tsp. Salt

Tart Filling:

  • 1/2 medium Onion, sliced thin
  • 3 oz. Goat Cheese
  • 2 tbsp. Olive Oil
  • 2 tsp. Minced Garlic
  • 3 tsp. fresh Thyme

 

PREPRATION:

  1. Preheat the oven to 435F (224C).
  2. Cut the tomatoes into 1/4″ slices and place them on a baking sheet. Drizzle with olive oil and season with salt and pepper to taste.
  3. Roast the tomatoes in the preheated oven for approximately 30-40 minutes until they are softened and slightly caramelized. To minimize the heating effect, you can use a toothpick to poke small holes in the tomatoes.
  4. Reduce the oven temperature to 350F (177C).
  5. In a food processor, combine the almond flour, psyllium husk, coconut flour, cold butter cubes, and salt. Pulse slowly until a dough forms.
  6. Using silicone cupcake molds, press the dough into thin layers of about 1/4″ to 1/2″, making approximately 12 tarts in total.
  7. Bake the tart bases in the preheated oven for 17-20 minutes or until they are fairly hardened. Allow them to cool completely.
  8. Remove the tart bases from the molds by tapping the lower part of the silicone cupcake.
  9. In a preheated pan, heat 2 tablespoons of olive oil. Add the sliced onions and minced garlic, and sauté until they turn brown.
  10. Assemble the tarts by placing roasted tomato slices, fried onions and garlic, fresh thyme, and crumbled goat cheese on top of the tart bases.
  11. Bake the tarts at 350F (177C) for 5-6 minutes or until the goat cheese starts to melt.
