INGREDIENTS:

  • The Base:
    • 3 medium Chicken Thighs
    • 2 teaspoons Chili Seasoning
    • Salt and Pepper to Taste
    • 2 tablespoons Chicken Fat or Olive Oil
    • 1 1/2 cups Chicken Broth
    • 1 1/2 cups Beef Broth
    • Salt and Pepper to Taste
  • BBQ Sauce:
    • 1/4 cup Reduced Sugar Ketchup
    • 1/4 cup Tomato Paste
    • 2 tablespoons Dijon Mustard
    • 1 tablespoon Soy Sauce
    • 1 tablespoon hot sauce
    • 2 1/2 teaspoons Liquid Smoke
    • 1 teaspoon Worcestershire Sauce
    • 1 1/2 teaspoons Garlic Powder
    • 1 teaspoon Onion Powder
    • 1 teaspoon Chili Powder
    • 1 teaspoon Red Chili Flakes
    • 1 teaspoon Cumin
    • 1/4 cup Butter

 

INSTRUCTIONS:

  1. Preheat the oven to 400F (200C).
  2. De-bone the chicken thighs and set the bones aside. Season the chicken thighs with your favorite chili seasoning.
  3. Line a cookie sheet with foil and bake the chicken thighs for 50 minutes, until cooked through.
  4. In a pot, add 2 tablespoons of chicken fat or olive oil and heat over medium-high heat. Once hot, add the chicken bones and cook for at least 5 minutes.
  5. Add the chicken broth and beef broth to the pot with the bones. Season with salt and pepper to taste.
  6. Remove the skins from the cooked chicken thighs and set them aside. Add all of the fat from the chicken thighs into the broth and stir.
  7. Make the BBQ sauce by combining all of the ingredients listed above.
  8. Add the barbeque sauce to the pot with the broth and stir everything together.
  9. Let the soup simmer in the pot for 20-30 minutes.
  10. Use an immersion blender to emulsify all of the fats and liquids together until smooth.
  11. Shred the cooked chicken thighs and add them to the soup. Optionally, you can also add sliced spring onion or diced bell pepper.
  12. Simmer the soup for another 10-20 minutes to allow the flavors to meld together.
  13. Serve the soup with yellow bell pepper, spring onion, or cheddar cheese. Top with the crispy chicken skins for added texture and flavor.
