INGREDIENTS:

  • 1 ½ cups short-grain brown rice
  • 2 ½ cups Dashi Stock (homemade or store-bought)
  • 2 tablespoons reduced-sodium tamari (or soy sauce)
  • 2 tablespoons mirin
  • Pinch of salt
  • ½ cup diced carrot
  • 6 ounces shiitake mushrooms
  • ¼ cup frozen peas
  • 2 scallions, thinly sliced

 

INSTRUCTIONS:

  1. Place the short-grain brown rice in a medium-sized saucepan. Add water until it’s about 2 inches above the rice level.
  2. Use your fingertips to gently rub the rice grains together to release excess starch. Pour off the cloudy water, and repeat this rinsing process two to three times until the water runs almost clear.
  3. Place the rinsed rice in a fine-mesh sieve and allow it to drain for about five minutes. Give the sieve a few shakes to ensure thorough draining, and then return the rice to the saucepan.
  4. In the same saucepan, add the homemade or store-bought Dashi Stock and set it over medium heat. Stir occasionally and bring it to a lively boil.
  5. Once it reaches a boil, remove the saucepan from the heat, cover it, and let it sit undisturbed for about ten minutes.
  6. While the rice is resting, add the frozen peas to the rice without stirring. Replace the lid and let the peas steam with the rice. After about ten minutes, fluff the rice gently with a fork, incorporating the peas.
  7. In a separate skillet, heat a small amount of sesame oil or vegetable oil over medium heat. Add diced carrots and sliced shiitake mushrooms. Sauté them until they become tender and slightly browned.
  8. Add the sautéed vegetables to the cooked rice. Drizzle reduced-sodium tamari (or soy sauce) and mirin over the mixture. Sprinkle a pinch of salt as needed.
  9. To complete your Takikomi Gohan, add thinly sliced scallions for a burst of freshness and color. Gently fold in the scallions to evenly distribute them throughout the dish.
