INGREDIENTS:

  • 3 tablespoons unsalted butter
  • 1 onion, chopped fine
  • Salt and pepper
  • 4 garlic cloves, minced
  • 1 teaspoon caraway seeds
  • 1 teaspoon minced fresh thyme or ¼ teaspoon dried
  • ½ teaspoon hot smoked paprika
  • ¼ cup dry white wine
  • 6 cups vegetable broth
  • 1 small head green cabbage (1¼ pounds), cored and cut into ¾-inch pieces
  • 12 ounces red potatoes, unpeeled and cut into ¾-inch pieces
  • 3 carrots, peeled and cut into ½-inch pieces
  • 1 bay leaf
  • 1 tablespoon minced fresh dill
  • 1 cup sour cream

 

INSTRUCTIONS:

  1. Melt butter in a Dutch oven over medium heat. Stir in onion and 1 teaspoon salt and cook until softened, 5 to 7 minutes.
  2. Stir in garlic, caraway, thyme, and paprika and cook until fragrant, about 30 seconds.
  3. Stir in wine, scraping up any browned bits, and simmer until nearly evaporated, about 1 minute.
  4. Stir in broth, cabbage, potatoes, carrots, and bay leaf, and bring to a boil. Cover, reduce to gentle simmer, and cook until vegetables are tender, about 30 minutes.
  5. Discard the bay leaf. Season the soup with salt and pepper to taste and sprinkle with dill.
