PREPARATION

  1. In a saucepan over medium-high heat, brown the extra-lean ground beef and chopped onion until the meat is no longer pink. Drain any excess fat.
  2. Stir in the minced garlic and low-sodium tomato juice, and bring the mixture to a boil.
  3. Transfer the meat mixture to a slow cooker. Add the sliced carrots, sliced celery, chopped green bell pepper, frozen green beans, cubed potatoes, water, Worcestershire sauce, oregano, basil, thyme, low-sodium onion soup mix, and pepper. Stir well to combine all the ingredients.
