INGREDIENTS:

  • 2 cups soft ripe fruit (cherries, berries, mangoes, melons, etc.), picked over, pitted, peeled, washed, and/or dried as necessary; or 2 cups liquid (fruit juice, coffee, or coconut milk)
  • Superfine sugar or Sugar Syrup, to taste
  • Freshly squeezed lemon juice or grated lemon zest, to taste (optional)

 

INSTRUCTIONS:

  1. If using fruit, purée it in a blender. If you have used mango or berries with lots of fibers or seeds, strain the purée to remove any unwanted components.
  2. Combine all the ingredients, ensuring you add enough sugar or syrup to achieve a nicely sweet blend. Optionally, add grated lemon zest for a zesty twist.
  3. Pour the mixture into a shallow glass or ceramic pan and place it in the freezer for about 2 hours.
  4. Every 30 minutes, take the pan out and stir the mixture to break up the ice crystals. This step ensures a slushy and crunchy texture.
  5. If the granita becomes too hard, pulse it (do not purée) in a food processor before serving.
  6. Serve the granita in chilled glasses or bowls, and enjoy its refreshing and icy goodness.

 

GREAT GRANITAS:

Here are six variations of granitas you can create by using these ingredients as your base and adjusting the sweetness according to your preference:

  • Pomegranate Granita: 2 cups bottled or fresh pomegranate juice, with a touch of lemon juice or zest (optional).

 

  • Orange, Tangerine, or Grapefruit Granita: 1/2 teaspoon grated or finely minced zest, 2 cups freshly squeezed juice.

 

  • Watermelon-Basil Granita: 2 cups chopped and seeded watermelon, 1/4 cup fresh basil leaves. Purée them together and then strain.

 

  • Green Apple-Lime Granita: 1 cored and chopped Granny Smith apple (peeled if desired) with 1/4 cup lime juice, and 1/2 teaspoon grated or finely minced lime zest. Purée them together to minimize browning.

 

  • Red Wine Granita: 1 1/2 cups Pinot Noir, Beaujolais, or other fruity wine, 1/2 cup water.

 

  • Apricot-Orange Blossom Water Granita: 2 cups pitted and chopped apricots, puréed, and 1 teaspoon orange blossom water.
