The hint of ginger in this refreshing sorbet kicks it up a notch, taking the sweetness of the pear to a new level of delicious. If ginger isn’t your thing, you can simply omit it.

 

INGREDIENTS: YIELD: 1 QUART

  • 3 pounds ripe pears
  • 1 cup water
  • ¼ teaspoon dried ginger
  • 1 tablespoon lemon juice
  • ¾ cup sugar

 

INSTRUCTIONS:

  1. Peel, core, and chop the pears; place with ½ cup of the water and the ginger in a medium-sized covered saucepan. Heat over medium heat, stirring occasionally, for 15–20 minutes, or until very tender.
  2. Remove pears from heat and add remaining water, lemon juice, and sugar in a food processor and process until smooth. Refrigerate until thoroughly chilled.
  3. Add to ice cream maker and follow manufacturer’s instructions for freezing
