The hint of ginger in this refreshing sorbet kicks it up a notch, taking the sweetness of the pear to a new level of delicious. If ginger isn’t your thing, you can simply omit it.
INGREDIENTS: YIELD: 1 QUART
- 3 pounds ripe pears
- 1 cup water
- ¼ teaspoon dried ginger
- 1 tablespoon lemon juice
- ¾ cup sugar
INSTRUCTIONS:
- Peel, core, and chop the pears; place with ½ cup of the water and the ginger in a medium-sized covered saucepan. Heat over medium heat, stirring occasionally, for 15–20 minutes, or until very tender.
- Remove pears from heat and add remaining water, lemon juice, and sugar in a food processor and process until smooth. Refrigerate until thoroughly chilled.
- Add to ice cream maker and follow manufacturer’s instructions for freezing
