Ever since we were kids, we’ve been making our grilled cheeses like this—by slathering the bread with butter and topping it with garlic salt before slowly cooking it to crispy perfection. Garlic Bread Grilled Cheese is a mouthwatering twist on the classic grilled cheese sandwich. This indulgent creation takes two favorite comfort foods, garlic bread and grilled cheese, and combines them into one delicious treat.

The secret to this sandwich’s irresistible flavor lies in the garlic-infused butter spread generously on the bread. As the sandwich grills, the garlic butter seeps into the bread, imparting its rich, savory essence. The addition of garlic salt adds an extra layer of aromatic goodness.

Inside, the sandwich features a gooey blend of vegan Mozzarella and Cheddar shreds that melt to perfection, creating a creamy and cheesy interior. When you bite into it, you’re met with a satisfying crunch from the perfectly toasted exterior, followed by a warm, cheesy, and garlic-infused center.

YIELD: 4 sandwiches

 

INGREDIENTS:

  • Vegan butter, as needed (nut-free and/or soy-free if needed)
  • 8 slices thick-cut vegan bread, such as Texas toast, or bread of choice (gluten-free if needed)
  • Garlic salt or store-bought, as needed
  • 1 cup (113 g) vegan Mozzarella shreds or store-bought (nut-free and/or soy-free if needed)
  • 1 cup (112 g) vegan Cheddar shreds or store-bought (nut-free and/or soy-free if needed)

 

INSTRUCTIONS:

  1. Begin by buttering one side of each slice of bread generously.
  2. Sprinkle your desired amount of garlic salt evenly over the buttered side of each bread slice.
  3. Assemble the sandwiches by placing 4 slices of bread, buttered side down, in a large, lidded skillet over medium heat. Depending on the size of your pan, you may need to do this in batches.
  4. On each slice of bread, layer approximately ¼ cup (28 g) of vegan Mozzarella shreds and ¼ cup (28 g) of vegan Cheddar shreds.
  5. Place the remaining 4 slices of bread, buttered side up, evenly over the sandwiches, creating a classic bread-and-cheese sandwich.
  6. Cook the sandwiches, covered with a lid, for about 5 minutes on each side. The goal is to achieve perfectly melted vegan cheese and lightly browned, crispy bread.
  7. Once the shreds of vegan cheese have melted to your satisfaction and the bread has achieved the desired level of crispiness, remove the sandwiches from the skillet.
  8. To make them easier to handle and serve, slice each grilled sandwich in half.
  9. Serve your delicious Grilled Vegan Cheese Sandwiches immediately while they’re hot and gooey.
