INGREDIENTS:

  • 2 tablespoons olive oil
  • 1 large sweet onion, diced
  • 1 small red bell pepper, diced
  • 1 large carrot, peeled and grated
  • 4 cloves garlic, minced
  • 1 tablespoon dried parsley
  • 1/2 teaspoon dried ground fennel
  • 1 teaspoon dried basil
  • 1 bay leaf
  • Pinch dried red pepper flakes
  • 1/2 teaspoon salt
  • 1 (14 1/2-ounce) can diced tomatoes in sauce
  • 1/2 cup Pressure Cooker Vegetable Stock

 

INSTRUCTIONS:

  1. Begin by adding the olive oil to your pressure cooker and bringing it to temperature over medium-high heat.
  2. Once the oil is hot, add the diced sweet onion, red bell pepper, and grated carrot to the pressure cooker. Sauté these vegetables for 3 minutes until they start to soften.
  3. Stir in the minced garlic and sauté for an additional 30 seconds, allowing the garlic to become fragrant.
  4. Add the dried parsley, dried ground fennel, dried basil, bay leaf, dried red pepper flakes, and salt to the sautéed vegetables. Stir in the diced tomatoes in sauce and the Pressure Cooker Vegetable Stock.
  5. Lock the lid into place on your pressure cooker. Bring the pressure cooker to low pressure and maintain this pressure for 10 minutes.
  6. After the 10 minutes of low-pressure cooking, quick-release the pressure.
  7. Remove the lid and give the sauce a good stir. If you prefer a smoother consistency, use an immersion blender to purée the sauce. Remember to remove and discard the bay leaf.
