  • 1/4 teaspoon cayenne pepper (optional, for a bit of heat)
  • Vegetable oil, for frying

INSTRUCTIONS

  1. Clean and Prepare the Smelts:
    • Rinse the smelts under cold running water and pat them dry with paper towels.
    • If desired, remove the heads and trim the fins, but this is optional.
  2. Season the Flour:
    • In a shallow bowl, combine the all-purpose flour, salt, black pepper, paprika (if using), and cayenne pepper (if using). Mix well to ensure the seasonings are evenly distributed.
  3. Coat the Smelts:
    • Heat a good amount of vegetable oil in a large skillet or deep fryer to about 350°F (175°C). You should have enough oil to submerge the smelts.
