One of the most popular Asian appetizers, fried dumplings are crispy and juicy pockets of goodness with bursts of savory filling. Fried until golden then steam quickly these dumplings are finger-licking delicious. These fried dumplings are also known as Potstickers or Guo tie. Popular delicacy in Chinese households, these fried dumplings are now famous worldwide. The filling includes pork or prawns seasoned with salt, pepper and ginger, it is more than just a delicious snack.

The secret behind getting a perfect crisp on the outside and rich, juicy filling on the outside is to fry until dumplings are golden and the steam with right amount of water. Serve hot with sauce. The sauce is typically made of soy sauce, sesame oil or hot chili oil and it tastes great.

Mostly the filling used is pork or prawns but chicken, beef and vegetable fillings are options as well. Add any of your favorite minced meat or seafood. For vegetarians tofu, mushrooms and cabbage would go great. You can enjoy these dumplings with rice, noodles or just as is

Ingredients

  • 20-25 dumpling sheets
  • 3 tablespoon vegetable oil
  • 220g pork mince
  • 5 prawns shelled and finely chopped
  • 20g minced ginger
  • 1 teaspoon spring onion finely chopped
  • 1 teaspoon Shaoxing wine
  • ½ teaspoon white pepper
  • ½ teaspoon salt
  • 30ml water
  • 3 tablespoons soy sauce
  • 1 tablespoon black vinegar
  • ½ teaspoon sesame oil
  • 10g julienned ginger

Instructions

  • In a bowl combine minced pork, chopped prawns, spring onion, minced ginger, sesame oil, salt, white pepper and Shaoxing wine. Mix well.
  • Take a dumpling sheet and place a tablespoon of prepared filling at the center. Moist the edges of sheet with water. Fold the dumpling into half and using your fingertips pinch the edges together and seal it properly.
  • Place a parchment paper on a plate and place filled dumplings on it.
  • Heat 2 tablespoon oil in a pan over medium heat. Fry dumplings in hot oils for around 3 minutes until these turn golden brown.
  • Add 30ml water in the pan and cover it. Steam for 3 to 5 minutes until water evaporates completely.
  • Prepare the sauce, add soy sauce, black vinegar, sesame oil and julienned ginger.
  • Transfer fried and steamed dumplings to a plate and serve with the sauce.

 

Note: uncooked dumplings can be frozen. Arrange these on tray and keep in freezer for later use. Leftover dumplings can be used in soup.
