INGREDIENTS

  2. Allow the sugar syrup to cook over the simmering water, without stirring, until it reaches the soft-ball stage, which is around 240°F (115°C). This process usually takes about 7-10 minutes.

 

Step 4: Whip Egg Whites

  1. While the sugar syrup is cooking, place the egg whites, cream of tartar, and a pinch of salt (if using) in a separate mixing bowl.
  2. Using an electric mixer or a stand mixer, beat the egg whites on medium-high speed until stiff peaks form. This process should take about 3-4 minutes.

 

Step 5: Pour Hot Syrup

  1. Once the sugar syrup has reached the soft-ball stage, remove it from the heat.
  2. While continuing to beat the egg whites on medium-high speed, slowly pour the hot sugar syrup in a thin, steady stream into the egg whites. Be careful to pour the syrup between the beaters and the side of the bowl to prevent hot syrup from splattering.
  3. Continue beating the mixture for an additional 5-7 minutes or until the frosting becomes thick, glossy, and holds its shape.

  1. Add the pure vanilla extract to the frosting and beat for another minute to incorporate it evenly.
