INSTRUCTIONS:

  1. Begin by preheating your oven to 325°F. Grease an 8 or 9-inch springform pan and line the bottom with waxed paper. To prevent any potential leaks, wrap the outside of the pan in foil. Also, prepare a pot of boiling water.
  2. Using either a handheld or standing electric mixer, beat the eggs until they double in volume, reaching approximately 1 quart. This should take about 5 minutes.
  3. Melt the semisweet chocolate and butter into the coffee. You can achieve this by using a double boiler or a microwave. Stir occasionally to ensure the mixture becomes exceptionally smooth.
  4. Fold in the whipped eggs in three additions, being careful not to overmix. Mix only as much as necessary to incorporate them into the chocolate-butter mixture. Pour this delectable concoction into the prepared springform pan.
  5. Place the springform pan into a deep roasting pan and position it on the lower middle rack of the oven. Pour enough boiling water into the roasting pan to come about halfway up the sides of the cake. Bake for approximately 25 minutes, or until the cake slightly rises, forms a thin, wispy crust, and registers 140°F on an instant-read thermometer inserted in the center.
  6. Transfer the springform pan to a wire rack and allow it to cool to room temperature. Afterward, refrigerate it overnight for best results. When you’re ready to serve, gently warm the sides of the springform pan with a hot, wet towel to loosen the cake. Carefully release the springform, cut with a hot, wet knife, and serve this chocolate masterpiece dusted with confectioners’ sugar and/or cocoa powder.
