These gorgeous fruits look magnificent in the jar, beautifully pink and jewel like.
MAKES: About 1 pint
INGREDIENTS:
- ¼ scant cup sugar
- ½ vanilla bean approx.
- 1¼-inch piece of cinnamon stick
- 6 or 7 figs, halved
- ¼ tsp citric acid
INSTRUCTIONS:
- Preheat the oven to 300˚F. In a pan, combine the sugar, vanilla bean, and cinnamon stick with 1 cup of water. Stir the mixture over low heat until the sugar is completely dissolved. Bring the mixture to a boil and let it simmer for 2 minutes to create a syrup. Once done, remove the pan from the heat and discard the cinnamon stick. Slice the vanilla bean in half lengthwise, scrape out the seeds using a knife, and add them to the syrup.
- Take a clean and sterilized jar and pack the figs into it with the cut sides facing outward. Insert the halves of the vanilla bean among the figs. Pour the prepared syrup over the figs, filling the jar completely. Swivel the jar gently to remove any air bubbles that may have formed.
- Cover the top of the jar with aluminum foil and place it on a baking tray lined with several layers of folded newspaper. Transfer the tray with the jar to the preheated oven. Bake for 25-30 minutes, allowing the syrup to turn into a delightful pink shade. Once the baking time is complete, remove the jar from the oven, discard the foil, and seal it tightly.
