Cranberries have a long and storied history, dating back to Native American tribes who used them for food, medicine, and even dyes. They were introduced to early European settlers and soon became a staple in American cuisine.

Cranberries gained popularity in the 19th century when they were cultivated as a commercial crop. Their vibrant red color and unique tartness made them a sought-after ingredient in both sweet and savory dishes. Cranberries became especially associated with Thanksgiving and Christmas, thanks in part to their seasonal availability and festive appearance.

In the 20th century, cranberry sauce became a traditional side dish for Thanksgiving turkey, and cranberries found their way into various desserts, including cakes and pies. Today, cranberries are celebrated for their versatility and health benefits, making them a beloved ingredient in holiday cooking and baking.

INGREDIENTS

For the Festive Cranberry Cake:

  • 1 ½ cups fresh or frozen cranberries
  • 1 ½ cups granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, melted
  • ½ cup sour cream

For the Orange Glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons fresh orange juice
  • Zest of 1 orange (optional, for added flavor)

INSTRUCTIONS

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×9-inch (23×23 cm) square baking pan.
  2. In a medium-sized bowl, toss the cranberries with ½ cup of granulated sugar. Set them aside to macerate while you prepare the cake batter.
  3. In a large mixing bowl, whisk together the remaining 1 cup of granulated sugar, eggs, and pure vanilla extract until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry mixture to the egg-sugar mixture, stirring until just combined.
  6. Stir in the melted unsalted butter and sour cream, mixing until the batter is smooth.
  7. Gently fold in the macerated cranberries, ensuring they are evenly distributed throughout the batter.
  8. Pour the batter into the prepared baking pan, spreading it evenly.
  9. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center of the cake comes out clean or with a few moist crumbs.
  10. While the cake is baking, prepare the Orange Glaze. In a small bowl, whisk together the powdered sugar, fresh orange juice, and orange zest (if using) until the glaze is smooth and pourable. Adjust the consistency by adding more juice or sugar as needed.
  11. Once the cake is done baking, remove it from the oven and allow it to cool in the pan for about 10 minutes.
  12. Drizzle the warm cake with the Orange Glaze, allowing it to soak in.
  13. Let the cake cool completely before slicing and serving. The glaze will set as it cools.
  14. Serve slices of this Festive Cranberry Cake as a delightful dessert for holiday celebrations or as a festive treat throughout the season. Enjoy the vibrant flavors of cranberries and the zesty touch of orange in every bite. Happy holidays!
