INGREDIENTS:
- 3 1/2 cups all-purpose or bread flour, plus more as needed
- 2 teaspoons salt
- 1 1/2 teaspoons instant yeast

- In a food processor, combine the flour, salt, and yeast. Turn on the machine and gradually pour about a cup of water through the feed tube while it is running. Process until the dough forms a ball. If the dough becomes too sticky or dry, adjust the consistency by adding more flour or water, one tablespoon at a time. The goal is to achieve a moist, slightly shaggy, and well-defined ball of dough.
- Transfer the dough to a large bowl or leave it in the processor bowl, removing the blade. Cover the dough with a plastic bag or plastic wrap and let it rest for at least an hour at room temperature. This period allows the dough to rise and develop flavor.
- Lightly flour a clean countertop or tabletop. Shape the dough according to your preference, whether into small loaves, a single large one, baguettes, or rolls. Sprinkle flour as needed to prevent sticking, but use it sparingly. Preheat the oven to 400°F, and if available, place a pizza stone and/or a pan filled with rocks in the oven (see page 854).
- Allow the shaped breads or rolls to rise on a cloth, if desired, covered with a towel. You can let them rise for about 2 to 3 hours at room temperature. Alternatively, for a more leisurely and flavorful version, let the dough rise for a longer period, up to 12 hours if refrigerated (bring it back to room temperature before proceeding).
- When you are ready to bake, use a razor blade or sharp knife to make one or two slashes on the top of each loaf. If the dough has risen on a cloth, gently transfer it onto floured baking sheets or a floured peel, plank of wood, or flexible cutting board before sliding it onto a pizza stone. Alternatively, you can bake the bread on lightly oiled baking sheets. Reduce the oven temperature to 375°F.
- Bake the bread until the crust turns golden brown and the internal temperature reaches at least 210°F. The bread should also sound hollow when tapped. If desired, spray the bread with water before baking for a shinier crust. Once baked, remove the bread from the oven and cool it on a wire rack.
- For a more whole grain variation, you can incorporate flours like whole wheat, rye, barley, or cornmeal. Substitute a portion of the all-purpose or bread flour with the whole grain flour of your choice. The addition of up to 1/2 cup will retain the classic texture, while larger amounts can create a softer crust and denser crumb.
