  • 2 onions, finely chopped
  • 1 clove garlic, chopped
  • ⅓ cup (45g) all-purpose flour
  • 3¼ cups (750ml) chicken stock
  • ⅔ cup (150ml) German wheat beer
  • 5½ oz (150g) Emmental, finely grated
  • 5½ oz (150g) Gruyère, finely grated
  • Freshly ground white pepper
  • 1 tbsp fresh thyme leaves, to serve

 

INSTRUCTIONS:

  1. Begin by melting the butter over low heat in a large, heavy pan. Add the finely chopped onion and garlic to the pan and sauté them for approximately 10 minutes until they become soft but not browned. Gradually stir in the all-purpose flour, ensuring it’s well incorporated.
  2. Pour the chicken stock into the pan a little at a time, stirring constantly to create a smooth mixture. Bring it to a boil, then let it simmer for about 10 minutes until the liquid begins to thicken slightly. Be sure to stir regularly to prevent the mixture from sticking to the pan.
  3. Add the German wheat beer to the mixture and bring it back to a gentle boil.
  4. Remove the pan from the heat and, very gradually, add the two cheeses—Emmental and Gruyère. Add a handful at a time and stir constantly until the cheeses are fully melted and incorporated.
  5. Season the soup to taste with freshly ground white pepper.
  6. To serve, pour the creamy Emmental and Beer Soup into warm soup bowls and garnish each with fresh thyme leaves.
