Yield: 4 egg rolls
Prep Time: 20 minutes
Cooking Time: 8 minutes
Total Time: 28 minutes
Dietary: Vegetarian
INGREDIENTS:
- 1 clove garlic, minced
- 1 teaspoon sesame oil
- 1 teaspoon olive oil
- ½ cup chopped celery
- ½ cup grated carrots
- 2 green onions, chopped
- 2 ounces mushrooms, chopped
- 2 cups shredded Napa cabbage
- 1 teaspoon low-sodium soy sauce
- 1 teaspoon cornstarch
- Salt, to taste
- 1 egg
- 1 tablespoon water
- 4 egg roll wraps
- Olive oil for misting or cooking spray
INSTRUCTIONS:
- Begin by heating a large skillet over medium heat. Sauté the minced garlic in sesame and olive oils for about 1 minute, releasing its aromatic flavors.
- Add the chopped celery, grated carrots, chopped green onions, and mushrooms to the skillet. Stir and cook for another minute to combine the flavors.
- Introduce the shredded Napa cabbage to the skillet, cover it, and cook for about 1 minute, or until the cabbage slightly wilts.
- In a small bowl, create a mixture by combining the low-sodium soy sauce and cornstarch. Stir this mixture into the cooked vegetables to create a thickened filling. If desired, season with salt to taste. Remove the skillet from heat.
- In a separate small bowl, beat the egg and water together to create an egg wash.
- Divide the prepared vegetable filling into four portions. Roll up each portion tightly in an egg roll wrap. Seal the edges by brushing them with the egg wash.
- Place the rolled egg rolls in the air fryer basket, and give them a very light misting of olive oil or use cooking spray.
- Set the air fryer to 390°F (199°C) and cook the egg rolls for 4 minutes. Afterward, carefully turn them over and cook for an additional 3 to 4 minutes until they turn golden brown and attain a satisfying crispy texture.
These homemade egg rolls offer a delightful contrast between the tender, flavorful vegetable filling and the satisfying crunch of the wrapper. In under 30 minutes, you’ll have a batch of these golden-brown delights ready to enjoy. Serve them as an appetizer, snack, or even a quick meal, and savor the combination of taste and texture that these egg rolls bring to your table.
