INGREDIENTS:

  • 1 clove garlic, minced
  • 1 teaspoon sesame oil
  • 1 teaspoon olive oil
  • ½ cup chopped celery
  • ½ cup grated carrots
  • 2 green onions, chopped
  • 2 ounces mushrooms, chopped
  • 2 cups shredded Napa cabbage
  • 1 teaspoon low-sodium soy sauce
  • 1 teaspoon cornstarch
  • Salt, to taste
  • 1 egg
  • 1 tablespoon water
  • 4 egg roll wraps
  • Olive oil for misting or cooking spray

 

INSTRUCTIONS:

  1. Begin by heating a large skillet over medium heat. Sauté the minced garlic in sesame and olive oils for about 1 minute, releasing its aromatic flavors.
  2. Add the chopped celery, grated carrots, chopped green onions, and mushrooms to the skillet. Stir and cook for another minute to combine the flavors.
  3. Introduce the shredded Napa cabbage to the skillet, cover it, and cook for about 1 minute, or until the cabbage slightly wilts.
  4. In a small bowl, create a mixture by combining the low-sodium soy sauce and cornstarch. Stir this mixture into the cooked vegetables to create a thickened filling. If desired, season with salt to taste. Remove the skillet from heat.
  5. In a separate small bowl, beat the egg and water together to create an egg wash.
  6. Divide the prepared vegetable filling into four portions. Roll up each portion tightly in an egg roll wrap. Seal the edges by brushing them with the egg wash.
  7. Place the rolled egg rolls in the air fryer basket, and give them a very light misting of olive oil or use cooking spray.
  8. Set the air fryer to 390°F (199°C) and cook the egg rolls for 4 minutes. Afterward, carefully turn them over and cook for an additional 3 to 4 minutes until they turn golden brown and attain a satisfying crispy texture.
