- 1 (16-oz [453-g]) package pasta of choice (elbow macaroni or cellentani)
- 1 tbsp (15 ml) olive oil
- ⅓ cup (75 g) vegan butter (nut-free and/or soy-free if needed)
- ⅓ cup (41 g) all-purpose flour
- 3 cups (720 ml) plain, unsweetened rice milk
- 1½ tsp (4 g) garlic powder
- 1 tsp onion powder
- 1½ tsp (3 g) paprika, plus more for topping
- 2 tsp (30 g) Dijon mustard
- 1½ tsp (9 g) salt, plus more to taste
- 2 cups (226 g) vegan Cheddar shreds (nut-free and/or soy-free if needed)
- Dried or chopped fresh parsley, for topping
INSTRUCTIONS:
- Cook the pasta according to the package instructions. Once cooked, drain and rinse in cold water, then place it back in the pot and toss with olive oil to prevent sticking.
- In a large skillet over medium-low heat, melt the vegan butter. Whisk in the all-purpose flour until fully incorporated.
- Slowly pour in the rice milk while whisking constantly to avoid lumps. Increase the heat to medium-high and bring the mixture to a gentle boil, continuing to whisk constantly.
- Lower the heat to low, bringing the mixture to a simmer. Whisk in the garlic powder, onion powder, paprika, Dijon mustard, and salt. Allow the mixture to simmer, whisking occasionally, for 3 to 5 minutes, or until it thickens.
- Stir in the vegan Cheddar shreds until they melt and the sauce becomes creamy and smooth.
- Add the cooked pasta to the cheese sauce, stirring to combine. Taste and adjust the salt if needed.
