INGREDIENTS:

  • 4 whole cloves

INSTRUCTIONS:

  1. Start by cutting the dried apricots and dried peaches into quarters. These will be the main fruits for your compote.
  2. Place the quartered apricots and peaches into the pressure cooker. Add the golden raisins, orange juice, a cinnamon stick, and four whole cloves.
  3. Lock the lid of the pressure cooker into place and bring it to high pressure. Once high pressure is reached, maintain the pressure for 3 minutes. This short cooking time is sufficient to soften the dried fruits and allow them to absorb the flavors of the spices and orange juice.
  4. After the 3 minutes of pressure cooking, remove the pressure cooker from the heat. Allow the pressure to release naturally. Once the pressure has dissipated, carefully open the lid.
  5. Place the pressure cooker back on medium heat. Allow the compote to simmer for several minutes. This step helps to thicken the compote and further infuse it with flavors.
  6. Before serving, remove both the cinnamon stick and the whole cloves from the compote.
  7. If you prefer your compote to be sweeter, you can add sugar at this stage. Be sure to stir the sugar into the compote while it’s still warm so that it dissolves properly. The amount of sugar you add is based on your personal preference.
  8. You can serve the dried fruit compote either warm or allow it to cool and serve it chilled. It can be stored in the refrigerator for up to a week.
