Dragonfruit Mint Ice Cream

Dragonfruit is a delicate but vibrant fruit that combines perfectly with just a bit of mint. This recipe creates a beautiful and unique ice cream; it’s even more beautiful when a red-fleshed dragonfruit is used.

INGREDIENTS: YIELD: 1 QUART

  • 2 cups chopped dragonfruit
  • ¼ cup fresh mint
  • 1 cup mascarpone
  • 1 cup heavy cream
  • ⅓ cup honey

 

INSTRUCTIONS:

  1. Place all ingredients into a blender, and process until smooth. Refrigerate 4 hours to overnight.
  2. Add to ice cream maker and follow manufacturer’s instructions for freezing.

 

Dragonfruit Tips

    • When buying dragonfruit, it should be blemish-free and bright pink in color.
    • When you gently squeeze it, it should feel slightly soft.
