Dragonfruit is a delicate but vibrant fruit that combines perfectly with just a bit of mint. This recipe creates a beautiful and unique ice cream; it’s even more beautiful when a red-fleshed dragonfruit is used.
INGREDIENTS: YIELD: 1 QUART
- 2 cups chopped dragonfruit
- ¼ cup fresh mint
- 1 cup mascarpone
- 1 cup heavy cream
- ⅓ cup honey
INSTRUCTIONS:
- Place all ingredients into a blender, and process until smooth. Refrigerate 4 hours to overnight.
- Add to ice cream maker and follow manufacturer’s instructions for freezing.
