INGREDIENTS:

  • 1 cup dried pinto beans
  • 8 cups water
  • 1 tablespoon vegetable oil

  • 1 egg, beaten, or 1 teaspoon cornstarch combined with 1 tablespoon water

  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • Salt and pepper, to taste

 

INSTRUCTIONS:

  1. Pressure Cook Pinto Beans: Start by adding the dried pinto beans and 4 cups of water to your pressure cooker. Lock the lid securely in place, and bring it to high pressure for just 1 minute. After the minute is up, remove the pressure cooker from the heat source and perform a quick release of the pressure.
  2. Rinse and Soak: Drain the water from the pinto beans and give them a thorough rinse. Place the beans back into the pressure cooker, this time with the remaining 4 cups of water. Allow them to soak in the water for about 1 hour. Soaking ensures that the beans cook evenly and have a desirable texture.
  3. Prepare the Pressure Cooker for Round 2: Following the soaking period, add the vegetable oil and salt to the pressure cooker with the beans. Secure the lid into place.
  4. Pressure Cook Again: Bring the pressure cooker back into action by setting it to high pressure for another 11 minutes. Once the cooking time is complete, remove the pressure cooker from the heat source and allow the pressure to release naturally. Once done, drain the cooked pinto beans and transfer them to a large mixing bowl.
  5. Combine Ingredients: Add the diced onions, chopped walnuts, plain oats, beaten egg (or cornstarch mixture), ketchup, garlic powder, dried basil, and dried parsley to the mixing bowl with the beans. Mix all the ingredients thoroughly to ensure an even distribution of flavors.
  6. Bake Your Dinner Loaf: Transfer the combined mixture into a loaf pan. Preheat your oven to 350°F (175°C). Bake the dinner loaf for approximately 30 to 35 minutes, or until it achieves a delightful golden brown color.
