INGREDIENTS:
- 225g fresh damsons, washed
- 55g caster sugar
- 360ml double cream
- 75ml milk
- 1 tbsp honey
- 6 egg yolks
- 1 x 20cm shortcrust pastry case, baked blind
INSTRUCTIONS:
- Stew the fruit with the sugar and 50ml of cold water until soft but not breaking apart. Drain the stewed fruit in a sieve to remove excess liquid.
- In a saucepan, warm the cream, milk, and honey over medium heat. Be careful not to let it boil. Just before it reaches boiling point, pour the mixture onto the egg yolks in a separate bowl. Whisk together until smooth and well combined.
- Scatter the stewed fruit into the baked blind shortcrust pastry case, ensuring an even distribution of the fruit.
- Place the pastry case with the fruit on a baking tray and slowly pour the custard mixture over the fruit, ensuring it is evenly distributed.
- Preheat the oven to 180°C (350°F). Bake the tart for about 30 minutes or until the custard is set. The tart should have a slightly golden hue and a firm texture when gently touched.
BENEFITS:
- Nutritional Value: Damsons, the star ingredient of this tart, are a rich source of vitamins and minerals. They contain vitamin C, which supports the immune system, and dietary fiber, which aids in digestion and promotes satiety.
- Antioxidant Power: Damsons are known for their high antioxidant content, particularly anthocyanins, which give them their deep purple color. Antioxidants help protect the body against oxidative stress and may contribute to overall health and well-being.
- Indulgence in Moderation: While desserts should be enjoyed in moderation, the occasional indulgence can bring joy and satisfaction. Treating yourself to a slice of Damson Tart can be a delightful way to enjoy a sweet treat and satisfy your cravings.
