Cucumber Mint Frozen Yogurt

Cucumbers and mint are a classic, refreshing combination for those sweltering days. Though not your average frozen dessert, this cool, creamy treat deserves
some recognition.

INGREDIENTS:  YIELD: 1 QUART

  • 6 cucumbers, peeled, seeded, and chopped
  • ⅓ cup fresh mint leaves
  • ½ cup honey
  • 8 ounces plain Greek yogurt (full fat)
  • Pinch salt
  • Juice of 1 lime
  • 1 tablespoon gin or vanilla extract

 

INSTRUCTIONS:

  1. Purée cucumbers in a blender until liquefied. Strain over a large bowl to remove the pulp. Discard pulp.
  2. Combine cucumber juice and remaining ingredients in the blender until mint leaves are chopped into very small pieces. Refrigerate overnight.
  3. Add to an ice cream maker and follow the manufacturer’s instructions for freezing.

  • Just one cucumber contains vitamins B1, B2, B3, B5, and B6, folic acid, vitamin C, calcium, iron, magnesium, phosphorus, potassium, and zinc.
