INGREDIENTS:

  • 2 medium cucumbers
  • Salt and freshly ground black pepper
  • 1 quart (1 liter) whole or low-fat milk
  • Small bunch of fresh dill
  • 1⁄2–2⁄3 cup (100–150ml) cold water
  • 2⁄3 cup (150ml) plain yogurt

 

INSTRUCTIONS:

  1. Begin by peeling the cucumbers, leaving a strip or two of skin on for a pop of color. Slice the cucumbers and place them in a colander. Sprinkle about a teaspoon of salt over the cucumbers, toss to combine, and let them drain over a bowl for one hour.
  2. Meanwhile, prepare the milk infusion. In a separate bowl, pour the whole or low-fat milk and add a few whole dill fronds to it. Stir to combine and let the flavors meld in the refrigerator for about an hour.
  3. After the cucumbers have drained, rinse them thoroughly under cold running water, gently pressing to extract excess moisture. Remove the dill fronds from the milk.
  4. In a blender or food processor, combine the drained cucumbers, milk, a few more dill fronds, and a dash of freshly ground black pepper. Blend until the mixture is smooth and well combined.
  5. Transfer the blended mixture into a bowl and refrigerate for approximately 3 hours, allowing the flavors to meld and the soup to chill.
  6. Just before serving, place a sieve over a clean bowl. Pour the chilled soup through the sieve, using the back of a wooden spoon to press the mixture through. Add the cold water to the strained soup and return it to the refrigerator until you’re ready to serve.
  7. Right before serving, stir in the plain yogurt to the chilled soup. Taste the soup and adjust the seasoning with salt and pepper as needed.
  8. Use a handheld or balloon whisk to froth the soup until it becomes light and airy.
  9. Carefully pour the soup into cups, bowls, or glasses, presenting its vibrant green hue.
  10. To garnish, adorn each serving with a sprinkle of additional dill for a burst of color and flavor.
