This is certainly a festive tart for Thanksgiving or holiday entertaining. It is very colorful, sweet, and nutty. Cranberry-Orange-Walnut is a very simple tart to make. If you have a tart shell already prepared, you can throw it together in just a few minutes.
INGREDIENTS:
- 9-inch Tart Dough (recipe on page 237)
- 2 large eggs
- 1/2 cup honey
- 1/4 cup butter, melted and cooled
- 2 tablespoons orange juice
- 1 teaspoon vanilla
- 1/4 teaspoon salt
- 1 cup chopped, cleaned cranberries
- 1/2 cup chopped walnuts
- 1 1/2 teaspoons grated orange rind
INSTRUCTIONS:
- Preheat oven to 350°.
- In a mixing bowl, combine eggs, honey, butter, orange juice, vanilla, and salt. Beat with a whisk until smooth.
- Stir in cranberries, walnuts, and orange rind.
- Pour the filling into the prepared tart shell.
- Bake in the center of the oven for 40 to 45 minutes or until golden.
- Let cool completely on a rack before serving.
