INGREDIENTS:

  • 2 cups (220 g) cranberries
  • ½ cup (60 g) chopped walnuts
  • 2 cups (250 g) flour
  • 1 cup (200 g) sugar
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 6 tablespoons (85 g) unsalted butter
  • ¼ cup (60 ml) egg substitute
  • 1 tablespoon (6 g) grated orange peel
  • ½ cup (120 ml) orange juice

 

PREPARATION:

  1. Spray a 2-quart (1.9 L) mold or coffee can with nonstick baking spray that contains flour. Preheat the slow cooker on high heat.
  2. In a food processor fitted with a coarse blade, grind the cranberries and walnuts until coarsely chopped.
  3. In a large mixing bowl, combine the flour, sugar, baking powder, and baking soda.
  4. Cut in the unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  5. Make an indentation in the center of the mixture and add the egg substitute, grated orange peel, and orange juice. Beat the mixture just until the lumps disappear.
  6. Add the chopped cranberries and walnuts to the batter and stir until evenly mixed.
  7. Pour the batter into the prepared mold or coffee can, spreading it evenly.
  8. Place the mold or can in the preheated slow cooker, cover it, and bake on high heat for 3 hours or until a toothpick inserted into the center comes out clean.
  9. After baking, let the bread cool in the pan for 15 minutes, then remove it from the pan and let it cool completely on a wire rack.
