In this culinary journey, we will explore the history, ingredients, and step-by-step instructions for crafting a Cornstarch Soufflé that encapsulates the charm of this timeless dessert.

The art of soufflé-making traces its origins to France, where it has been perfected over centuries. The term “soufflé” comes from the French verb “souffler,” which means “to blow” or “to puff.” Early soufflés were often savory, but the concept of sweet soufflés, such as Cornstarch Soufflé, emerged during the 19th century. This dessert exemplifies the French culinary philosophy of elevating simple ingredients to extraordinary heights. Cornstarch, once considered a basic thickening agent, is transformed into a delicate and ethereal treat in this dessert, showcasing the evolution of culinary techniques and tastes.

INGREDIENTS

For the Cornstarch Soufflé:

  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 cups whole milk
  • 4 large egg yolks
  • 1 teaspoon pure vanilla extract
  • 4 large egg whites
  • 1/4 teaspoon cream of tartar
  • Butter and sugar for coating the soufflé dish

For Serving (Optional):

  • Powdered sugar for dusting
  • Whipped cream or a fruit sauce for garnish

INSTRUCTIONS

1. Prepare the Soufflé Dish:

  • Start by generously buttering the inside of a 2-quart soufflé dish or an ovenproof casserole dish. Coat the buttered surface with granulated sugar, shaking off any excess. This helps the soufflé to rise evenly.

2. Create the Cornstarch Base:

  • In a medium-sized saucepan, whisk together the granulated sugar, cornstarch, and salt.

3. Heat the Milk:

  • Gradually add the whole milk to the sugar and cornstarch mixture, whisking continuously to create a smooth paste.
  • Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a gentle boil. This usually takes about 5-7 minutes.

4. Temper the Egg Yolks:

  • In a separate bowl, whisk the egg yolks. Gradually add a small amount of the hot milk mixture to the yolks while whisking vigorously. This process, called tempering, prevents the yolks from curdling when added to the hot mixture.

5. Combine the Mixtures:

  • Gradually add the tempered egg yolk mixture back into the saucepan with the hot milk mixture, whisking continuously.
  • Continue to cook and whisk for an additional 2-3 minutes until the mixture thickens further and becomes a smooth custard.
  • Remove the saucepan from heat and stir in the pure vanilla extract.

6. Whip the Egg Whites:

  • In a separate clean, dry bowl, beat the egg whites and cream of tartar with an electric mixer until stiff peaks form. This will take a few minutes.

7. Combine and Fold:

  • Gently fold the stiffly beaten egg whites into the cornstarch custard mixture. Use a gentle folding motion to maintain the lightness of the soufflé.

8. Bake:

  • Pour the soufflé mixture into the prepared dish and smooth the top.
  • Place the dish in the preheated oven and bake at 350°F (175°C) for 30-35 minutes or until the soufflé is puffed and golden brown on top.

9. Serve Immediately:

  • Remove the Cornstarch Soufflé from the oven and serve it immediately while it’s still puffy.
  • Dust with powdered sugar and garnish with whipped cream or a fruit sauce if desired.

NOTES:

  • Cornstarch Soufflé is a testament to the artistry of French pastry, where simple ingredients are transformed into ethereal creations. Whether served as a sweet conclusion to a special meal or as a show-stopping dessert for a gathering, this soufflé invites you to savor the delicate balance of flavors and textures that have made it a timeless classic.
