YIELD: 6 appetizer-size servings

INGREDIENTS:

  • 2 tablespoons butter
  • 4 ounces sliced mushrooms
  • 1 small onion, sliced paper-thin
  • 1 quart beef broth
  • 2 tablespoons dry sherry
  • 1/4 teaspoon pepper

 

INSTRUCTIONS:

  1. Melt the butter in a skillet, and saute the mushrooms and onions in the butter until they’re limp. Add the beef broth, sherry, and pepper.
  2. Let it simmer for 5 minutes or so, just to blend the flavors a bit, and serve.

 

PER SERVING:

  •  5 grams of carbohydrates and 1 gram of fiber, for a total of 4 grams of usable carbs and 8 grams of protein.
