YIELD: 6 appetizer-size servings
INGREDIENTS:
- 2 tablespoons butter
- 4 ounces sliced mushrooms
- 1 small onion, sliced paper-thin
- 1 quart beef broth
- 2 tablespoons dry sherry
- 1/4 teaspoon pepper
INSTRUCTIONS:
- Melt the butter in a skillet, and saute the mushrooms and onions in the butter until they’re limp. Add the beef broth, sherry, and pepper.
- Let it simmer for 5 minutes or so, just to blend the flavors a bit, and serve.
PER SERVING:
- 5 grams of carbohydrates and 1 gram of fiber, for a total of 4 grams of usable carbs and 8 grams of protein.
